John Young is an African American man raised in Alabama then moved to Buffalo, New York, to work as a teenager.

Wings N’ Things sold whole crispy chicken wings with his recipe of mambo sauce (sometimes called mumbo or mombo sauce). His mambo sauce becomes a hit, and many customers fall in line to get one.

However, he had to close his store in 1967 because of race riots for his safety.

Mambo sauce has a similarity to that of a barbecue sauce, but it’s a tomato-based sauce that is more tangy, sweet and has a spicy kick to it.

2. Teressa Bellissimo of Anchor Bar

Teressa Bellissimo is an Italian woman who created buffalo chicken wings for his son’s friends.

There are two versions of her story.

She created the said recipe because of the wrong delivery of chicken parts they bought for their restaurant. So, instead of getting other chicken parts, they were given chicken wings instead.

So, instead of putting those to waste, she decided to fry it up and mix a special spicy sauce with it, then added celery and blue cheese on the sides to make balance.

On the other hand, her son Dominic Bellissimo said that his friends were at their place and asked his mom to create something for them right on the spot.

So her mom created the buffalo wings out of the things she had left in her kitchen.

According to Thomas Snyder, his grandfather, Robert Reinhart, made the recipe for buffalo wings sauce.

My chicken buffalo wings are simple yet may be complicated on your part because I don’t have an exact measure to create them.

I rely on my taste buds to know if the flavor is right.

Here is my version of chicken buffalo wings:

  1. Chicken wings
  2. Corn starch
  3. Hot sauce (any brand will do)
  4. Butter
  5. Brown sugar
  6. A dash of pepper and salt
  7. Lemon juice
  8. Red chilli peppers, chopped

First, put your chicken wings in cold running water three times and dry them using paper towels.

Next, season your chicken wings with a dash of salt and pepper, then coat them with corn starch.

Then, heat your pan and put on your cooking oil (I prefer coconut oil when frying them to give a nutty flavor).

When the oil is hot enough, deep fry your chicken wings until golden brown.

If you don’t want to fry them, you can use your air fryer or bake them in the oven for 30-40 mins until brown and crispy.

The next stop is the sauce.

Heat your pan and put butter on it. Next, add your hot sauce, brown sugar, a dash of pepper, and chopped red chillis when melted.

Mix them well for 3-5 mins.

Lastly, turn off the fire, add a bit of lemon juice, and then mix well.

Please wait for it to cool down a bit before mixing it with your chicken wings, or you may serve it as a dip instead.

I apologize if I can’t give you an exact measurement of my recipe because I do it according to my feeling and taste.

So, every time I cook it, it always feels like it’s the first time.
